High School Block:

Culinary Technology 120

The culinary industry is always in need of hard working, innovative, and creative individuals. Culinary Technology 120 focuses on the cooking aspect of the culinary trade.  Students will learn to cook for themselves and their families while also learning about food safety, the culinary industry, healthy food choices, local food security, and local food systems.  This Skilled Trades course could be used as foundational learning for students interested in pursuing a career in the food service industry.  All students will examine pathways related to post-secondary and direct to work opportunities.  This course will incorporate a hands-on approach of both project-based and experiential learning using the lifelong learning skills of collaboration, communication, critical thinking, problem solving, innovation, sustainability, global citizenship, and self-management.

Note:  It is strongly recommended that learners take Culinary Technology 110 prior to Culinary Technology 120.  Foundational learning in Culinary 110 will be expanded on in Culinary 120.  Schools should consider facility restrictions when determining appropriate class sizes due to safety concerns, equipment availability and infrastructure limits.  Recommended maximum class sizes should be 20 students in most cases.
